Healthy-Ish Sweet Snack // Chocolate Dipped Rice Cakes

I purposely do NOT buy packaged sweets at the market because I have very little control around sugar. I know that if I buy it, I will eat it… all of it. the same night.

My body doesn’t react well to sugar. It never has. I was in denial of it for many years, but once you know things, you can’t turn back. So I feel actually pretty bad mentally and physically after eating too much sugar. But I am drawn to it like an fiend.

I do, however, keep baking supplies on hand, for those times I need to bake… and for those incredibly annoying chocolate and sugar cravings that won’t go away until satisfied.

This is why I tend to make my eggless cookie dough for one recipe so often. It’s great for controlling proportions of sweets. If I made an entire batch, I’d eat them all… maybe not in one night, but definitely in one week. SO, instead, I make like 4, in my toaster oven, and don’t feel so bad about it, mentally or physically.

Well, I found a few boxes of old baker’s chocolate in my cupboard the other night left over from my cake pop making days and decided it should be put to use during a frantic chocolate craving.

Someone tell me why Baker’s chocolate tastes so disgusting in bar form, but once it’s melted, it’s DIVINE? I don’t get it, but it’s the truth.

So all I had in my cupboard was rice cakes because for late night snacking, rice cakes are the best. So I made these dipped chocolate rice cakes and they were SO GOOD, that I made them every other night until all my baker’s chocolate was gone.

Seriously. SO. GOOD.

Here’s What you Need….

* Rice cakes (unsalted, unflavored)
* Baker’s Chocolate

* Wax paper

* Melt your chocolate in the microwave or in a pan on the stove and stir it.

* Dip your rice cakes into the chocolate and wipe away the excess.

* You can also use a spoon to drizzle the chocolate on top BUT theres’ something so delicious about biting into the thick chocolate edge of the rice cake.

* Line a plate with wax paper and place your dipped rice cakes on it… set it in the fridge for about an hour and THEN EAT THEM ALL.

I sprinkled a little powdered sugar on a few… it was pointless and messy, but it looked pretty!

NOTE: They taste the best the same night.

They are also good the following night BUT the rice cakes get a little less crunchy after sitting in the fridge.
