It’s May and I’m anticipating summer already and that means it’s time to celebrate upcoming lazy days in the sun, lounging along the lake, and warm summer nights spent laughing and relaxing with friends. Not that I need an occasion to celebrate, but SUMMER is calling my name hard this year, so I thought I’d whip up a pre-summer Ecco Domani Prosecco cocktail we can sip on all season long.
This sweet and scintillating Ecco Prosecco and mixed berries cocktail is my own little concoction, unless you know something I don’t, and it’s beyond delicious. It’s fresh, sweet, but not too sweet, and a little tangy, and with just the right amount of fizz. It’s the perfect cocktail to serve with salty appetizers and an easy way to upgrade an already delicious drink in minutes. It’s fruit-filled and beautiful at the same time and so ready to enjoy. So invite your girlfriends over, get mixing, and start dreaming about how this summer is going to be the best one yet.
Ingredients…
* Ecco Domani Prosecco
* A cup of your favorite mixed berries
* Simple syrup
* Serves 4
Garnish…
* Mixed berries… I used organic blueberries, raspberries, and blackberries
* Short wooden sticks
* Agave or honey
* Sprinkles from the bakery section of your grocery store
1. Wash your berries
2. Skewer them however you like
3. Freeze them for at least an hour
TIP: Instead of ice cubes, use your frozen berry skewers to chill your Ecco Cocktail by letting them freeze overnight.
4. Dip the tips of your sticks into your honey or agave and remove excess
5. Roll them around in your sprinkles until fully covered.
6. Freeze them so they adhere without stickiness
TIP: If you want your cocktails a little sweeter, rim your glasses with your sprinkles as well.
Mix It…
1. Drop a handful {up to a cup} of mixed berries into your shaker
2. Add simple syrup to the near the top of your berries {I didn’t measure}
3. Muddle
4. Pour 1/4″ berry mixture into each of your glasses
5. Top with Ecco Domani Prosecco
TIP: IF you want the fruit to stay at the bottom {mostly – like mine}, pour your Prosecco over a turned spoon, which will also keep the colors pretty and separated, but add the sweet and tangy berry flavor.
6. Finish your cocktails off by dropping your pretty frozen fruit skewers into each glass.
