Well, I’ve gone and done it. I’ve officially made my favorite pasta of all time!
This Grilled Mushroom & Artichoke Lemon Pasta is so simple and perfectly delicious. It’s kinda like my segway into spring.
It’s still hearty enough for those cold winter nights, but the flavors are so bright and cheery that you can literally taste spring!
Do you guys like mushrooms? I’ve always liked them. Well, not always. But ever since I started liking them, I’ve been a fan. However, recently I’ve become obsessed. The trick to really good mushrooms is to let ’em cook niiiiiiiiice and slooooooow. Let them get soft and caramelized, because nobody likes a rubbery mushroom.
Oh and those grilled artichokes. No, I didn’t grill them myself, I got the jar of marinated grilled artichoke hearts and I chopped them up and tossed them in. They give the perfect tang to this dish with the caramelized onions and mushrooms. I’m literally drooling.
This dish is definitely a show stopper. Maybe not quite as much as announcing the wrong Oscar nominee for best picture, but nonetheless it’s pretty stunning.
