Oh glorious summer, you are finally here! And that means afternoons and evenings spent enjoying the warm breeze on the veranda and patio with friends and family and of course, pets! I’m all about easy but delicious food and refreshing drinks for summer, with little mess to clean up because that just takes all the fun out of it, right? So a little patio pizza and Prosecco party is a great go-to for last minute guests or even to plan, because it’s just so EASY!
I’m not a huge berry-lover… mainly because I don’t like seeds. The seeds in any berries and even mixed in smoothies, desserts, jams, and whatever else, drive. me. CRAZY. But recently, I’ve been a bit obsessed with blackberries. If they’re perfectly ripe, the flavor is off the charts, and I rarely, if ever, am caught with a mouth full of seeds. For this reason, I thought a refreshing and light Ecco Domani Prosecco summer cocktail must include a few blackberries.
Here’s What You’ll Need…
- 2/3 cups Ecco Prosecco {150 ml or 5 fluid ounces} Chilled
- 1/4 cups Limoncello {50 ml or 2 fluid ounces} Chilled
- 3-6 Blackberries
Three Quick Steps…
* Drop 3-5 blackberries in the bottom of your glass.
* Pour in 1/4 cups of your favorite brand of Limoncello
NOTE: If you want MORE blackberry flavor, muddle them with Limoncello!
* Pour in 2/3 cups {or more -to taste} of your Ecco Prosecco and swirl. That’s it!

Faux “Gourmet” Pizza…
I’ve been dying to make Laney’s grilled arugula pizza, but I’m no chef, and I’m super lazy when it comes to food. To get the best of both worlds, kind of, I bought the best and healthiest frozen pizza I could find, baked it, and upgraded it by tossing arugula and sliced tomatoes on top and let me tell you… IT WAS DELICIOUS!
