
I’m such a bread lover… like almost as much as I love chocolate ice cream, I love bread. If I could live on bread and chocolate, I most certainly would. But as of late, {since last Summer actually, when I got a high glucose reading at the doctor’s office} I’ve been trying to cut down on sugar and bread, since bread technically turns into sugar.
So when I saw these cauliflower bagels at Apples to Zoodles I was desperate to try them.
I followed her recipe but left out a crucial step: I didn’t grease my pan because it was non-stick and didn’t think I had to – but I was wrong, so admittedly, my bagels didn’t pop out as they should have and I wasn’t able to brown the bottom as the recipe stated. So I let them cool enough to be able to get them out of the pan, flipped them over on a small baking sheet and toasted them in the toaster oven to finish them up.
They turned out just okay… but I’m willing to take all the blame and I’d like to try again. I wasn’t overwhelmed with the taste either, as I was hoping they’d really feel more like a bagel instead of cauliflower. But they were good.
What You’ll Need…
* 1 head of cauliflower
* 3 tblsp almond flour
* 1 tblsp coconut flour
* 2 large eggs
* garlic powder {to taste}
* onion powder {to taste}
Toppings
* Sesame seeds
* Poppy seeds
* Sea salt

* Pre-heat oven to 400

* Pop cauliflower florets into food processor and blend until it looks like rice.

* In a large bowl, add flours to your cauliflower, your onion & garlic powders…. beat your eggs in a separate bowl, and mix them in as well.

* Press “dough” into your greased donut pan

* Sprinkle salt and seeds on top and pop in the oven for 15 minutes or when you see the top begin to brown.
* Remove from oven, flip bagels onto a flat baking sheet, then pop back in the oven for 5-10 minutes.
* Add more salt to taste.
And… Voila!

This looks good and easy enough to make. I love recipes that don’t have a long list of ingredients. I hope to try this when I get the chance to and after I get a bagel/donut pan, which I had no idea existed. I always thought there was a mold for it like popsicle molds/ molds for ice cubes. I’m curious to know how it tasted. Was it as satisfying as a bagel?

This recipe is very close to the cauliflower pizza bases I’m enjoying lately. Good pizza topping selection allows you to add great flavours. My latest was ground beef (with taco seasoning) and cheese. I use hazlenut or walnut flour instead of almond – it gives a much more savoury bread taste, and I find almond flour sometimes tastes a little chemical-y.
