Before all the holiday cookies and desserts, let’s sneak in some greens.
I’m kind of a sucker for any type of chopped salad, because BITE SIZED, obviously, but that said, both of these salads are perfect as holiday sides or on their own. They’re hearty, healthy, and full of great textures and flavor your mouth will love.
First, my Shaved Brussels Sprouts Salad w/ Black Rice, Dates, & Cashews

Don’t you just want to dig right in?
This season I’m kind of obsessing over these little gems. I love the sweet and tangy bite pomegranates add to a dish, and they’re just so gosh darn pretty!


Balance my friends, balance.
And now onto my Chopped Kale Salad w/ Creamy Yogurt Dressing

It’s hard for me not to add sweet potatoes to this recipe. They’re just so IN right now, and I love the sweet flavor they provide contrasted with the slightly bitter kale.

These look so delicious! I am completely trying them out today! Thanks for sharing the wonderful recipes. I would also pop in some macadamia nuts in the first recipe to add to the taste and nutritiousness too.
