I love holiday-themed cocktails! I mean, who doesn’t, right? Last year for St. Patrick’s Day I made a very green and very sweet Green Apple Wine Cocktail with Ecco Domani Prosecco, stirred it with green apple stick candies and topped it with sour apple gummy candies, and it was surely tasty.

Ecco Domani Wine cocktails are just so easy to throw together but feel so special at the same time and a simple way to upgrade any celebration. This year for St. Patrick’s Day, I wanted to create something a little fresher, with a little -or actually, a LOT less sugar. I did a quick search and found this Emerald Isle Wine Cocktail Recipe and in addition to the appropriately green title, I thought it was the perfect solution for this year’s festivities. I grabbed my Ecco Domani Pinot Grigio, all my additional ingredients, and got to mixing my own version of it.

I must admit that it’s even better than last year’s. The flavor is fresh and delicious and not too sweet at all, it’s perfect. In fact, the main sweetness come from the sugar along the rim, so if you’re watching your sugar intake, omit the sugared rim OR better yet, just use a straw, because the rim is just so cute!

The fresh and textured garnish and green sugared rim give it the fun St. Patrick’s Day festiveness, so if you’re planning a party, don’t skip those special add-ons because they make this Ecco Domani Wine cocktail as pretty as it is delicious!

Here’s What You’ll Need…

Cucumber Lime Mint Ecco Domani Wine Cocktails

  • Ecco Domani Pinot Grigio
  • Fresh Cucumber and Mint Leaves
  • Green Sparkling Sugar {from the baking section of your local grocery store}
  • 3/4 oz. Simple Syrup
  • 3/4 oz. Lime juice or Fresh Limes {or both if you like lime!}
  • Soda Water
  • Shorty skewer sticks for your garnish

Here’s How You Make Your Wine Cocktail…

Begin by washing your fresh cucumber and mint leaves and twigs. Peel half of your cucumber, then slice and cut into quarters. Slice the skinned end into rounds for your garnish.

Add a handful of peeled cucumber chunks and mint leaves into your shaker and muddle…

Add ice…

Ecco Domani St Patricks Day Wine Cocktail

Pour in your Lime Juice and Simple Syrup.

Ecco Domani pinot grigio wine cocktail

Fill the remainder of the shaker with Ecco Domani Pinot Grigio and… SHAKE SHAKE SHAKE!

Sugar rimmed glass

Pour your sparkling sugar onto a plate, wet the rim of your glass with a paper towel, then roll your glass in your sugar until you get the desired amount around the rim.

Add ice to your glasses…

Ecco Domani Green Wine Cocktail recipe

Strain/pour your cocktail into your glasses…

Add a splash of soda water… or two splashes if you like it fizzy!

Slide two cucumbers onto your shorty skewer sticks, add a mint twig, then finish with two more cucumber slices…
